Chicken Skillet
1/4 cup Miracle Whip Salad Dressing
1- 1/2 cup Minute rice, uncooked
1 -1/2 cup chicken broth
1 Tbsp. chili powder
4 small boneless, skinless chicken breast halves
1 tomato, chopped
1/2 cup shredded cheddar cheese

Mix Salad dressing, rice, broth and chili powder in large skillet. Top with chicken. Bring to boil; cover. Reduce heat to low; simmer 25 minutes. Top with remaining ingredients. Cook an additional 10 minutes.

Stuffed Mushrooms - Greek Style
1 large pkg whole white mushrooms (around 25 count)
2 pkg (10oz.) chopped frozen spinach (thawed and drained)
1 can or jar (about 5oz) Greek black olives (chopped)
3-4 chopped onions
1 pkg (3.5oz) feta cheese (crumbled)

Wash mushrooms thoroughly. Remove stems & chop...set aside. Dry mushroom caps

Saute onions in olive oil. Add spinach & mushroom stems. Cook a few minutes. Mix in olives & feta cheese.

Stuff mushrooms & set on oiled baking dish. Set oven to 325 degrees & bake until mushrooms are tender. Cool & serve

Cornbread Pudding
1/2 c. butter, melted
8 oz. container sour cream
2 eggs
14 3/4 oz. can Green Giant Cream Style Sweet Corn
11 oz. can Green Giant White Shoe Peg Corn
11 oz. can Green Giant Mexicorn Whole Kernel Corn, Red and Green Peppers
8 1/2 oz pkg. corn muffin mix

Heat oven to 375 degrees. Spray 12x8" 2 qt. glass baking dish w/ nonstick cooking spray. In large bowl, combine butter, sour cream, and eggs. Mix well. Add cream corn, shoe peg corn, corn with peppers and muffin mix. Stir just until moistened. Pour into sprayed baking dish. Bake at 375 oven for 45-55 minutes or until slightly puffed and golden brown. Cut into squares to serve.

For Don in Mich.,
I'm sorry I don't know the name of the spice you are looking for, but I have a suggestion for the saffron. Since Paella has a rice base, why not use a package of Mahatma Brand Yellow Rice for part of the rice needed? That should give you that lovely yellow color and flavor that you are looking for. Let me know if that works.

This is a low carb soup recipe that I made last week for my husband with what I had on hand. I threw a large chopped yellow onion and a couple cloves or more (your taste here-)of minced garlic into a skillet with a little EVOO ( been watching Rachael, again!) Stir in the onion til it started to brown. I dumped that into my crock pot and added 2 cans of no salt added diced tomatoes. I sliced up 2 packages of turkey smoked sausage and added it to the tomatoes. Add two cans of low sodium chicken broth. Got that well stirred and added 2-3 cups of shredded, chopped cabbage. My husband over ate the soup he liked it so much. I just kept adding the same ingredients over and over to keep the pot full. He would eat the meat out, so I'd add some more and cook it. I ate just the broth; it had the sausage flavor and the broth and tomatoes were delish! I'm making it again this week, and need to make enough for him to have leftovers for his lunch. I set my crock on high to get it started and turned it down to low of 6 hours and all was well.

Low Carb Meatloaf
I used 21/2 lbs. of 90/10 ground chuck. Instead of crackers, I used 3 C. of grated cabbage, 1 medium chopped onion, 1 green bell pepper diced 2 eggs, pepper, 1/2 t. garlic powder, 1/2 onion powder, 1 15 oz. chopped tomatoes in tomato sauce. I baked this in two pans because I started with too small of a pan. I let them cook about an hour, then took them out and poured off the small amount of fat that had cooked off. I then put about 1/4 C. katsup on the top and put each back in the oven. They cooked another 1/2 hour reaching and internal temperature of 170* F.

This is a "NO BAKE" Pineapple Cheesecake
this is very easy to make and refreshing!

Pineapple Cheesecake
1 small can of crushed pineapple
1 ( 3oz ) pkg lemon jello
1 ( 8 oz) pkg cream cheese
1 small can evaporated milk
1/2 cup of sugar
1 tsp of lemon juice
1/4 pound graham cracker crumbs
1 stick oleo
1/2 cup of sugar

Bring can of pineapple to a boil. Add lemon Jell-O, set aside to cool and thicken. Mix cream cheese, sugar and vanilla together. Add Jell-O, pineapple mixture. Whip evaporated milk until thick with lemon juice. Add pineapple jello cheese mixture to whipped milk. Blend well and pour into graham cracker crust made with 1/2 cup sugar, oleo and graham crackers. Chill.

Nancy friends and Dianne in east Tn. At our home we have learnt to curtail all the foods that seem to cause health problems. The easiest way to avoid these foods is to learn to read every label and if high in a category . don't buy it. These are a few hints we use

Throw out the box of salt and put away the salt shakers. Use Mrs. Dash seasonings Make a sandwich with one slice of bread. Rye bread is low in carbs.

Rinse all canned and frozen vegetables and fruits. Rinsing canned vegetables can lower sodium 70% sugars off of fruits.
Learn to rinse your hamburger meat before adding to casserole.
The computer will tell what foods are high in carbohydrates, cholesterol and fat.

Put a search for foods of carbohydrates, cholesterol sodium and trans fats Learn to use smaller servings. A big help
Learn to read labels. That is the biggest hint to use.

This is for Karen T. in KY. Hopefully it is what she is looking for and can enjoy the yummy Hot Cocoa recipe.

Rich & Creamy Coca Mix
3/4 cup powdered nondairy creamer
1/2 cup nonfat dry milk powder
1/2 cup milk chocolate chips
1/4 cup granulated sugar
1/4 cup packed brown sugar
3 tablespoons unsweetened cocoa powder
1/8 teaspoon salt
8 peppermint sticks

1. Combine all ingredients in bowl except peppermint sticks; mix ell. Place mix in 1-pint food storage jar with tight-fitting lid. Lightly pack mixture down, if needed. Evenly place peppermint sticks around outside of jar or tie sticks to outside of jar with ribbon.

Cover top of jar with fabric; attach gift tag with raffia or ribbon.
Makes 1 (1-pint) jar

Here are instructions for the cocoa to put on jar:
Rich & Creamy Cocoa

1 jar Rich & Creamy Cocoa Mix
6 cups boiling water
Whipped cream

Remove peppermint sticks from jar. Place cocoa mix in medium saucepan. Add water; stir until mix is dissolved and chips are melted. Keep warm over low heat.
Pour into individual coffee cups. Add 1 peppermint stick to each cup; garnish with dollop of whipped cream.
Makes 8 (3/4 cup) servings.

Single Serving: Place ¼ cocoa mix in coffee cup; add ¾ cup boiling water. Stir with peppermint stick until mix is dissolved and chocolate chips are melted. Garnish with dollop of whipped cream. If using large coffee mugs, double the recipe for single serving.

This is in response to Nedra in VA who is looking for North Carolina Barbecue Sauce recipes. I also included a recipe for North Carolina-Style Coleslaw. My name is Sheila. Being from the northern part of the US, this was a new experience for me when I moved to NC, especially the barbecued coleslaw.

Eastern North Carolina-Style Vinegar Sauce
1 cup water
5 cups distilled white vinegar
3 tablespoons salt, or more to taste
3 tablespoons sugar
3 tablespoons freshly ground black pepper
2 tablespoons hot red pepper flakes, or more to taste
3 tablespoons hot sauce, such as Tabasco or Texas Pete

Pt the vinegar, salt, sugar, black pepper, hot red pepper flakes, and hot sauce I a large non-reactive bowl, add 1 cup of water, and wisk until the salt and sugar dissolve. Or place the ingredients in a large jar and shake to mix. Taste for seasoning, adding more salt and/or hot red pepper flakes as necessary. The sauce can be refrigerated for several weeks. Bring it to room temperature before using.

Yield: Makes about 6 cups.

North Carolina-Style Coleslaw
1 large head green cabbage
1 -1/2 Eastern North Carolina-Style Vinegar Sauce
Salt (optional)

Remove the core from the cabbage and discard it. Cut the cabbage into 8 chunks. Finely chop the cabbage in a food processor using the metal blade and pulsing the motor (this is a chopped, not sliced or slivered, slaw). Work in several batches so as not to overcrowd the processor bowl.

Place the cabbage in a large non-reactive bowl and stir in the vinegar sauce. Taste for seasoning, adding more vinegar sauce as necessary. Let stand for 10 minutes, then taste again, adding more vinegar sauce and/or salt as necessary. The coleslaw can be made up to 4 hours ahead. Store it in the refrigerator, covered. We put this slaw on our pork barbecues in NC or eat as a side with pulled pork.

Yield: 6 to 8 cups

Lexington Vinegar Sauce ( Western North Carolina Style)
2-1/2 cups cider vinegar
1/2 cup ketchup
2 tablespoons brown sugar
1 tablespoon hot sauce
4 teaspoons salt
4 teaspoons hot red pepper flakes
1 teaspoon freshly ground black pepper
1 teaspoon white pepper
1 ½ tablespoons rub (recipe to follow) or your favorite barbecue rub

Combine the vinegar, ketchup, brown sugar, hot sauce, salt, hot red pepper flakes, black pepper, white pepper, and rub in a large non-reactive bowl with ½ cup of water. Whisk until the sugar and salt dissolve. Alternately, place the ingredients in a large jar and shake to mix. Stored in a jar in the refrigerator the sauce will keep for several weeks. Bring to room temperature before using.

Yield: Makes about 3-1/2 cups.

Rub recipe for pork shoulder:
4 teaspoons sweet paprika
1 tablespoon brown sugar
1 tablespoon salt
1 teaspoon black pepper
1 teaspoon white pepper
1 teaspoon dry mustard
1 teaspoon garlic powder
1/2 to 1 teaspoon cayenne pepper

Place the paprika, brown sugar, salt, black pepper, white pepper, mustard, garlic powder, and cayenne in a small bowl and stir to mix.


Hi Nancy and readers, This isn't a recipe but a "helpful hint:" For everyone who has to scrape ice and snow, slip a large baggie over outside mirrors and one of the sleeve plastic bags our newspapers are delivered in over windshield wipers, the baggie can be zip locked at either end to fit tighter.

Hi, everyone. I'm smack dab in the middle of Oklahoma and today we've had rain, sleet and snow. Wish I had 105-degree temperatures to gripe about again - LOL.

I have a question for Tyler; the Italian Cheesecake sounds wonderful, but I need to know the size of the carton of sour cream. Two tablespoons of sugar doesn't sound like enough for an 8 or 16-oz carton, and four ounces doesn't seem like enough to cover the top of a 10" cheesecake. Please clarify, as I'd love to try this recipe.

Reheat Pizza
Heat up leftover pizza in a non-stick skillet on top of the stove, set heat to med-low and heat till warm. This keeps the crust crispy. No soggy micro pizza. I saw this on the cooking channel and it really works.

Easy Deviled Eggs
Put cooked egg yolks in a zip lock bag. Seal, mash till they are all broken up. Add remainder of ingredients, reseal, keep mashing it up mixing thoroughly, cut the tip of the baggy, squeeze mixture into egg. Just throw bag away when done easy clean up.

Expanding Frosting
When you buy a container of cake frosting from the store, whip it with your mixer for a few minutes. You can double it in size. You get to frost more cake/cupcakes with the same amount. You also eat less sugar/calories per serving.

Reheating refrigerated bread
To warm biscuits, pancakes, or muffins that were refrigerated, place them in a microwave with a cup of water. The increased moisture will keep the food moist and help it reheat faster.

Newspaper weeds away
Start putting in your plants, work the nutrients in your soil. Wet newspapers put layers around the plants overlapping as you go cover with mulch and forget about weeds. Weeds will get through some gardening plastic they will not get through wet newspapers.

Squirrel Away!
To keep squirrels from eating your plants sprinkle your plants with cayenne pepper. The cayenne pepper doesn't hurt the plant and the squirrels won't come near it.

Flexible vacuum
To get something out of a heat register or under the fridge add an empty paper towel roll or empty gift wrap roll to your vacuum. It can be bent or flattened to get in narrow openings.

Reducing Static Cling
Pin a small safety pin to the seam of your slip and you will not have a clingy skirt or dress. Same thing works with slacks that cling when wearing panty hose. Place pin in seam of slacks and - voila - static is gone.

Before you pour sticky substances into a measuring cup, fill it with hot water. Dump out the hot water, but don't dry the cup. Next, add your ingredient, such as peanut butter, and watch how easily it comes right out.

Reopening envelope
If you seal an envelope and then realize you forgot to include something inside, just place your sealed envelope in the freezer for an hour or two. Voila! It unseals easily.

Use your hair conditioner to shave your legs. It's a lot cheaper than shaving cream and leaves your legs really smooth. It's also a great way to use up the conditioner you bought but didn't like when you tried it in your hair...

Goodbye Fruit Flies
To get rid of pesky fruit flies, take a small glass fill it 1/2" with Apple Cider Vinegar and 2 drops of dishwashing liquid, mix well. You will find those flies drawn to the cup and gone forever!

Get Rid of Ants - Wonder if this works on fire ants????
Put small piles of cornmeal where you see ants. They eat it, take it "home," & can't digest it so it kills them. It may take a week or so, esp. if it rains, but it works & you don't have the worry about pets or small children being harmed!

Take baby powder to the beach
Keep a small bottle of baby powder in your beach bag. When your ready to leave the beach sprinkle yourself and kids with the powder and the sand will slide right off your skin.
